-here are a most delicious variation of "Quarktaschen" Bines bavarian pockets😘
"Quark" is a kind of cottage cheese or soft cheese with about 20% of fat.
Dough
120 g milk fullfat, lukewarm
25 g aktive (fresh) yeast
400 g Flour (cake)
40 g Sugar
60 g Butter, unsalted
2 Eggs at roomtemperature
1pinch of Salt
Filling
300 g "Quark"
100 g Creme fraiche
90 g sugar
20 g vanillasugar
20 g Lemon juice
20 g Cornstarch
1 tsb Vanillapaste
1 whole egg
1 eggyolk
Preparation:
- Mix the Milk, yeast and sugar and 1 TBs of the flour and let it sit for about 10- 15 min.
- Now mix all other ingrediens for the dough minimum 5 min with a Kitchenaid or sth.
- Let the dough covered with a kitchentowel to double size.
In the meantime mix all ingrediens for the filling without lumps.
- Put half the risen dough on a floured surface and roll it out to get 10 quarters with 10x10 cm in size when you cut it.
- In every quarter put 1 Tbs of the fillig.
- Fold it like an envelope.
- Brush it with eggwash.
Bake it in the center of your 200 degree hot oven for about 20 min until light golden.
Continue with the other part of the dough and repeat the process.
Let it cool comletely and decorate with powdered sugar.
